Ingredients

  • Almond flour - 1 cup
  • Psyllium husk - 2 tablespoons
  • Cheese (mozzarella) - 100 grams, shredded
  • Cream cheese - 50 grams
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cabbage - 100 grams, finely shredded
  • Carrot - 50 grams, grated
  • Capsicum (bell pepper) - 50 grams, thinly sliced
  • Green chili - 1, finely chopped (optional)
  • Coriander leaves - 2 tablespoons, chopped
  • Olive oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, salt, and turmeric powder.
  2. In a saucepan, melt the mozzarella and cream cheese together over low heat until they are well combined.
  3. Add the cheese mixture to the flour mixture and knead until a dough forms. If it's too dry, add a teaspoon of water at a time until it reaches a pliable consistency.
  4. Divide the dough into 4 equal portions and roll each portion into a thin circle between two sheets of parchment paper.
  5. In a separate bowl, mix the shredded cabbage, grated carrot, sliced capsicum, chopped green chili (if using), and coriander leaves together. Season with a pinch of salt.
  6. Place a tablespoon of the vegetable mixture in the center of each dough circle and fold it over to create a roll, sealing the edges with a little water.
  7. Heat olive oil in a frying pan over medium heat. Fry the rolls until golden brown and crispy on all sides, about 3-4 minutes per side.
  8. Remove from the pan and place on paper towels to drain excess oil before serving.
