Ingredients
- Almond flour - 1 cup
- Psyllium husk - 2 tablespoons
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 1/4 cup
- Cauliflower - 200 grams, finely chopped
- Green beans - 100 grams, chopped
- Cumin seeds - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Oil for frying - as needed
Steps
- In a mixing bowl, combine almond flour, psyllium husk, and salt. Add olive oil and water, mixing until a dough forms. Let it rest for 10 minutes.
- In a pan, heat a tablespoon of oil over medium heat. Add cumin seeds and sauté for a minute until fragrant.
- Add chopped cauliflower and green beans to the pan, along with garam masala, turmeric powder, coriander powder, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.
- Stir in chopped cilantro and lemon juice. Remove the mixture from heat and let it cool slightly.
- Divide the dough into small balls. Roll each ball into a thin circle on a parchment paper surface.
- Cut the circle in half to form two semi-circles. Take one semi-circle, fold it into a cone, and seal the edge with water.
- Fill the cone with the vegetable mixture and seal the open edge by pinching it together. Repeat for remaining dough and filling.
- In a deep pan, heat oil for frying. Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the samosas and drain on paper towels. Serve hot with keto-friendly chutney or yogurt.
