Ingredients

  • Almond flour - 1 cup
  • Psyllium husk - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 1/4 cup
  • Cauliflower - 200 grams, finely chopped
  • Green beans - 100 grams, chopped
  • Cumin seeds - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Oil for frying - as needed

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, and salt. Add olive oil and water, mixing until a dough forms. Let it rest for 10 minutes.
  2. In a pan, heat a tablespoon of oil over medium heat. Add cumin seeds and sauté for a minute until fragrant.
  3. Add chopped cauliflower and green beans to the pan, along with garam masala, turmeric powder, coriander powder, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.
  4. Stir in chopped cilantro and lemon juice. Remove the mixture from heat and let it cool slightly.
  5. Divide the dough into small balls. Roll each ball into a thin circle on a parchment paper surface.
  6. Cut the circle in half to form two semi-circles. Take one semi-circle, fold it into a cone, and seal the edge with water.
  7. Fill the cone with the vegetable mixture and seal the open edge by pinching it together. Repeat for remaining dough and filling.
  8. In a deep pan, heat oil for frying. Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per side.
  9. Remove the samosas and drain on paper towels. Serve hot with keto-friendly chutney or yogurt.
