Ingredients

  • Cauliflower rice - 2 cups
  • Mixed bell peppers (red, yellow, green) - 1 cup, diced
  • Green beans - 1/2 cup, chopped
  • Zucchini - 1 small, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add cumin seeds and sauté until they start to splutter.
  3. Add the finely chopped onion, garlic, and ginger. Sauté until the onion becomes translucent.
  4. Stir in the diced mixed bell peppers, chopped green beans, and diced zucchini. Cook for about 5-7 minutes until the vegetables are tender.
  5. Add the cauliflower rice to the pan and mix well with the vegetables.
  6. Sprinkle coriander powder, turmeric powder, garam masala, and salt. Stir to combine and cook for another 5 minutes.
