- Cauliflower - 200 grams, finely chopped
- Spinach - 100 grams, chopped
- Zucchini - 100 grams, grated
- Almond flour - 100 grams
- Psyllium husk - 1 tablespoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1 teaspoon (or to taste)
- Black pepper - 1/2 teaspoon
- Green chili - 1, finely chopped (optional)
- Garlic - 2 cloves, minced
- Water - as needed (approximately 3-4 tablespoons)
- Olive oil - 2 tablespoons (for brushing)
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the chopped cauliflower, spinach, grated zucchini, almond flour, psyllium husk, cumin powder, turmeric powder, chili powder, salt, black pepper, green chili, and minced garlic.
- Mix the ingredients well, and gradually add water, one tablespoon at a time, until a thick batter forms that holds the vegetable mixture together.
- Using your hands, shape the mixture into small fritters or pakoras and place them on the prepared baking tray.
- Brush the tops of the pakoras lightly with olive oil for extra crispiness.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
- Once done, remove from the oven and allow to cool slightly before serving.
