- Cauliflower - 200 grams, grated
- Zucchini - 100 grams, grated
- Spinach - 50 grams, chopped
- Almond flour - 50 grams
- Psyllium husk - 1 tablespoon
- Egg - 1 large
- Garam masala - 1 teaspoon
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili powder - 1/2 teaspoon
- Oil - for frying (coconut or avocado oil) - 200 ml
- Lettuce leaves - 4 large (for buns)
- Sliced tomato - 1 medium
- Sliced onion - 1 small
- Cilantro - for garnish
Steps
- In a large mixing bowl, combine grated cauliflower, grated zucchini, chopped spinach, almond flour, psyllium husk, egg, garam masala, cumin powder, salt, black pepper, and chili powder. Mix well until all ingredients are fully incorporated.
- Heat the oil in a deep frying pan over medium heat.
- Once the oil is hot, scoop out portions of the vegetable mixture and shape them into patties.
- Fry the patties in batches for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain excess oil on paper towels.
- To assemble the burger, place two lettuce leaves on a plate, add a vegetable pakora patty, top with sliced tomato, sliced onion, and garnish with cilantro.
- Cover with another two lettuce leaves to create a 'bun' and serve immediately.
