Ingredients

  • Cauliflower - 150 grams, finely chopped
  • Zucchini - 100 grams, grated
  • Spinach - 50 grams, chopped
  • Almond flour - 100 grams
  • Chickpea flour - 30 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 100 ml (adjust as needed)
  • Coconut oil - for frying

Steps

  1. In a large mixing bowl, combine the chopped cauliflower, grated zucchini, and chopped spinach.
  2. Add the almond flour, chickpea flour, ground cumin, ground coriander, turmeric powder, red chili powder, salt, black pepper, and baking powder to the vegetables.
  3. Gradually add water to the mixture until it reaches a thick batter consistency that can hold the vegetables together.
  4. Heat coconut oil in a frying pan over medium heat.
  5. Once the oil is hot, carefully drop spoonfuls of the batter into the oil, flattening them slightly to form fritters.
  6. Fry the pakoras for about 3-4 minutes on each side or until they are golden brown and crispy.
  7. Remove the pakoras from the oil and place them on a paper towel to drain excess oil.
  8. Serve hot with green chutney or yogurt dip.
