- Cauliflower - 150 grams, finely chopped
- Zucchini - 100 grams, grated
- Spinach - 50 grams, chopped
- Almond flour - 100 grams
- Chickpea flour - 30 grams
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Water - 100 ml (adjust as needed)
- Coconut oil - for frying
Steps
- In a large mixing bowl, combine the chopped cauliflower, grated zucchini, and chopped spinach.
- Add the almond flour, chickpea flour, ground cumin, ground coriander, turmeric powder, red chili powder, salt, black pepper, and baking powder to the vegetables.
- Gradually add water to the mixture until it reaches a thick batter consistency that can hold the vegetables together.
- Heat coconut oil in a frying pan over medium heat.
- Once the oil is hot, carefully drop spoonfuls of the batter into the oil, flattening them slightly to form fritters.
- Fry the pakoras for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the pakoras from the oil and place them on a paper towel to drain excess oil.
- Serve hot with green chutney or yogurt dip.
