Ingredients

  • Zucchini - 2 medium (about 300g)
  • Coconut oil - 2 tablespoons (30ml)
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper - 1 medium (about 150g), diced
  • Cauliflower florets - 100g
  • Green beans - 100g, chopped
  • Coconut milk - 200ml
  • Keto-friendly curry powder - 1 tablespoon (15g)
  • Turmeric powder - 1 teaspoon (5g)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Using a spiralizer, create zucchini noodles from the zucchinis and set aside.
  2. In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
  4. Add the diced bell pepper, cauliflower florets, and green beans to the skillet. Cook for 5-6 minutes until the vegetables are tender.
  5. Sprinkle the curry powder and turmeric over the vegetables, stirring well to coat. Cook for another minute to toast the spices.
  6. Pour in the coconut milk and stir until well mixed. Allow the mixture to simmer for 5 minutes until slightly thickened.
  7. Add the zucchini noodles to the skillet, gently tossing to combine. Cook for another 2-3 minutes until the noodles are heated through.
  8. Season with salt and black pepper to taste. Remove from heat and garnish with fresh cilantro before serving.
