- Zucchini - 2 medium (about 300g)
- Coconut oil - 2 tablespoons (30ml)
- Onion - 1 small (about 100g), finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Bell pepper - 1 medium (about 150g), diced
- Cauliflower florets - 100g
- Green beans - 100g, chopped
- Coconut milk - 200ml
- Keto-friendly curry powder - 1 tablespoon (15g)
- Turmeric powder - 1 teaspoon (5g)
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Using a spiralizer, create zucchini noodles from the zucchinis and set aside.
- In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
- Add the diced bell pepper, cauliflower florets, and green beans to the skillet. Cook for 5-6 minutes until the vegetables are tender.
- Sprinkle the curry powder and turmeric over the vegetables, stirring well to coat. Cook for another minute to toast the spices.
- Pour in the coconut milk and stir until well mixed. Allow the mixture to simmer for 5 minutes until slightly thickened.
- Add the zucchini noodles to the skillet, gently tossing to combine. Cook for another 2-3 minutes until the noodles are heated through.
- Season with salt and black pepper to taste. Remove from heat and garnish with fresh cilantro before serving.
