- Zucchini - 150 grams
- Cauliflower - 100 grams
- Spinach - 50 grams
- Almond flour - 50 grams
- Grated ginger - 1 teaspoon
- Garlic, minced - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Egg - 1 large
- Fresh coriander leaves, chopped - 2 tablespoons
- Oil for frying - as needed
Steps
- Grate the zucchini and cauliflower, then place them in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, cauliflower, chopped spinach, almond flour, grated ginger, minced garlic, cumin powder, coriander powder, turmeric powder, red chili powder, salt, black pepper, and chopped coriander leaves.
- Crack in the egg and mix all the ingredients until well combined. The mixture should be thick enough to form balls.
- Heat oil in a frying pan over medium heat. Once hot, shape the vegetable mixture into small balls (koftas) and gently place them in the hot oil.
- Fry the koftas for about 4-5 minutes on each side or until golden brown and crispy. Remove them and drain on paper towels.
- Serve hot with a side of low-carb yogurt or cucumber raita.
