Ingredients

  • Bell pepper (red) - 100g
  • Zucchini - 150g
  • Cauliflower - 150g
  • Spinach - 100g
  • Tomato - 100g
  • Ginger - 1 tsp (grated)
  • Garlic - 2 cloves (minced)
  • Cumin seeds - 1 tsp
  • Coriander powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Garam masala - 1/2 tsp
  • Coconut oil - 2 tbsp
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a kadai or large pan over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add grated ginger and minced garlic; sauté until fragrant.
  4. Chop the bell pepper, zucchini, cauliflower, and tomato into bite-sized pieces.
  5. Add bell pepper and zucchini to the pan, cooking for about 5 minutes until they start to soften.
  6. Add cauliflower and tomato, and stir well.
  7. Season with coriander powder, turmeric powder, salt, and black pepper; mix thoroughly.
  8. Cover and cook for another 10 minutes, stirring occasionally.
  9. Add spinach and garam masala, stir well, and cook for an additional 5 minutes until the spinach wilts.
  10. Taste and adjust seasoning if necessary.
  11. Remove from heat and garnish with fresh coriander leaves before serving.
