- Bell pepper (red) - 100g
- Zucchini - 150g
- Cauliflower - 150g
- Spinach - 100g
- Tomato - 100g
- Ginger - 1 tsp (grated)
- Garlic - 2 cloves (minced)
- Cumin seeds - 1 tsp
- Coriander powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1/2 tsp
- Coconut oil - 2 tbsp
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat coconut oil in a kadai or large pan over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add grated ginger and minced garlic; sauté until fragrant.
- Chop the bell pepper, zucchini, cauliflower, and tomato into bite-sized pieces.
- Add bell pepper and zucchini to the pan, cooking for about 5 minutes until they start to soften.
- Add cauliflower and tomato, and stir well.
- Season with coriander powder, turmeric powder, salt, and black pepper; mix thoroughly.
- Cover and cook for another 10 minutes, stirring occasionally.
- Add spinach and garam masala, stir well, and cook for an additional 5 minutes until the spinach wilts.
- Taste and adjust seasoning if necessary.
- Remove from heat and garnish with fresh coriander leaves before serving.
