- Cauliflower - 200 grams
- Zucchini - 100 grams
- Spinach - 50 grams
- Almond flour - 50 grams
- Coconut flour - 20 grams
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Egg - 1, beaten
- Coconut oil - for frying
Steps
- Steam the cauliflower until tender, about 8-10 minutes, then mash it in a bowl.
- Grate the zucchini and squeeze out excess moisture using a clean cloth.
- In a large mixing bowl, combine the mashed cauliflower, grated zucchini, chopped spinach, green chili, ginger, garlic, cumin powder, coriander powder, turmeric powder, salt, black pepper, and chopped coriander leaves.
- Add almond flour, coconut flour, and the beaten egg to the vegetable mixture, and mix well until it forms a dough-like consistency.
- Divide the mixture into 4 equal portions and shape them into cutlets.
- Heat coconut oil in a frying pan over medium heat.
- Fry the cutlets for about 4-5 minutes on each side or until golden brown and crispy.
- Remove from the pan and place on paper towels to absorb excess oil before serving.
