Ingredients

  • Cauliflower - 200 grams
  • Zucchini - 100 grams
  • Spinach - 50 grams
  • Almond flour - 50 grams
  • Coconut flour - 20 grams
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Egg - 1, beaten
  • Coconut oil - for frying

Steps

  1. Steam the cauliflower until tender, about 8-10 minutes, then mash it in a bowl.
  2. Grate the zucchini and squeeze out excess moisture using a clean cloth.
  3. In a large mixing bowl, combine the mashed cauliflower, grated zucchini, chopped spinach, green chili, ginger, garlic, cumin powder, coriander powder, turmeric powder, salt, black pepper, and chopped coriander leaves.
  4. Add almond flour, coconut flour, and the beaten egg to the vegetable mixture, and mix well until it forms a dough-like consistency.
  5. Divide the mixture into 4 equal portions and shape them into cutlets.
  6. Heat coconut oil in a frying pan over medium heat.
  7. Fry the cutlets for about 4-5 minutes on each side or until golden brown and crispy.
  8. Remove from the pan and place on paper towels to absorb excess oil before serving.
