- Zucchini - 100 grams, chopped
- Spinach - 50 grams, chopped
- Green beans - 50 grams, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - to taste
- Coconut oil - 1 tablespoon
- Coriander leaves - for garnish
Steps
- In a large pot, heat the coconut oil over medium heat.
- Add the cumin seeds and sauté until they begin to crackle.
- Stir in the grated ginger and minced garlic, cooking until fragrant (about 1 minute).
- Add the chopped cauliflower, zucchini, green beans, and spinach to the pot, and stir for a few minutes.
- Pour in the water and bring the mixture to a boil.
