Ingredients

  • Cauliflower - 200 grams
  • Almond flour - 100 grams
  • Psyllium husk - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Oil - for frying (coconut or olive oil) - about 100 ml

Steps

  1. Steam the cauliflower florets for about 10 minutes until tender, then drain and mash them in a bowl.
  2. Add turmeric, cumin, garam masala, chili powder, salt, coriander, green chili, ginger, and garlic to the mashed cauliflower and mix well.
  3. In a separate bowl, combine almond flour and psyllium husk. Gradually add water, mixing until a dough forms.
  4. Divide the cauliflower mixture into small balls (about the size of a golf ball).
  5. Take a portion of the almond flour dough, flatten it in your palm, and place a cauliflower ball in the center. Wrap the dough around the filling and shape it into a patty.
  6. Heat oil in a pan over medium heat. Fry the patties until golden brown on both sides, about 3-4 minutes per side.
  7. Transfer the fried Keto Vada Pav to a plate lined with paper towels to absorb excess oil.
  8. Serve hot with green chutney on the side.
