- Almond flour - 1 cup
- Psyllium husk - 2 tablespoons
- Coconut flour - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Water - 1/2 cup
- Oil for frying - as needed
Steps
- In a mixing bowl, combine almond flour, psyllium husk, coconut flour, baking powder, salt, cumin seeds, and chili powder.
- Add the chopped fresh coriander to the dry ingredients and mix well.
- Gradually add water to the dry mixture, kneading until a smooth dough forms. Let it rest for 10 minutes.
- Divide the dough into equal portions and shape each portion into a round disc or donut shape.
- Heat oil in a frying pan over medium heat. Once hot, gently place the shaped vadas into the oil.
- Fry the vadas until golden brown and crispy on both sides, about 3-4 minutes per side.
- Remove from oil and place on paper towels to absorb excess oil. Serve hot.
