- Coconut milk - 200 ml

- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Salt - to taste
- Fresh cilantro - for garnish
- Olive oil - 1 tablespoon
Steps
- Heat the olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the chopped fresh tomatoes to the pot and cook for about 10 minutes, stirring occasionally until they soften.
- Sprinkle in the turmeric, coriander powder, red chili powder, and salt. Mix well and let it cook for 3-4 minutes.
- Pour in the coconut milk and stir to combine. Allow the mixture to simmer for another 5-7 minutes.
