Ingredients

  • Fresh tomatoes - 400 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Olive oil - 1 tablespoon

Steps

  1. Heat the olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the chopped fresh tomatoes to the pot and cook for about 10 minutes, stirring occasionally until they soften.
  5. Sprinkle in the turmeric, coriander powder, red chili powder, and salt. Mix well and let it cook for 3-4 minutes.
  6. Pour in the coconut milk and stir to combine. Allow the mixture to simmer for another 5-7 minutes.
  7. Use an immersion blender to puree the soup until smooth, or transfer to a blender and blend until creamy.
  8. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
