Ingredients

  • Riced cauliflower - 400 grams
  • Tomatoes (finely chopped) - 200 grams
  • Onion (finely chopped) - 50 grams
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Water - 100 ml

Steps

  1. Heat coconut oil in a pan over medium heat, then add cumin seeds and let them splutter.
  2. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions turn translucent.
  3. Stir in the chopped tomatoes and green chili, cooking until the tomatoes soften and release their juices.
  4. Add turmeric powder, coriander powder, and salt. Mix well and cook for another 3-4 minutes.
  5. Add the riced cauliflower and water to the pan, mixing everything thoroughly.
  6. Cover the pan and let it cook for about 10-12 minutes on low heat until the cauliflower is tender.
  7. Stir in the garam masala and chopped cilantro, cooking for an additional 2 minutes.
  8. Remove from heat and serve hot, garnished with extra cilantro if desired.
