- Riced cauliflower - 400 grams
- Tomatoes (finely chopped) - 200 grams
- Onion (finely chopped) - 50 grams
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green chili (slit) - 1
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh cilantro (chopped) - 2 tablespoons
- Coconut oil - 2 tablespoons
- Salt - to taste
- Water - 100 ml
Steps
- Heat coconut oil in a pan over medium heat, then add cumin seeds and let them splutter.
- Add chopped onions, minced garlic, and grated ginger. Sauté until the onions turn translucent.
- Stir in the chopped tomatoes and green chili, cooking until the tomatoes soften and release their juices.
- Add turmeric powder, coriander powder, and salt. Mix well and cook for another 3-4 minutes.
- Add the riced cauliflower and water to the pan, mixing everything thoroughly.
- Cover the pan and let it cook for about 10-12 minutes on low heat until the cauliflower is tender.
- Stir in the garam masala and chopped cilantro, cooking for an additional 2 minutes.
- Remove from heat and serve hot, garnished with extra cilantro if desired.
