- Tomatoes - 300 grams, chopped
- Water - 500 ml
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Asafetida (hing) - 1/4 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Green chilies - 1, slit
- Lemon juice - 1 tablespoon
Steps
- In a pot, heat coconut oil over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, asafetida, and turmeric powder, and sauté for 30 seconds.
- Add chopped tomatoes and green chilies to the pot, cooking until the tomatoes soften, about 5-7 minutes.
- Pour in the water and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
- Add salt to taste and stir in the fresh coriander leaves and lemon juice just before serving.
- Serve hot, garnished with additional coriander if desired.
