Ingredients

  • Tomatoes - 300 grams, chopped
  • Water - 500 ml
  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Asafetida (hing) - 1/4 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Green chilies - 1, slit
  • Lemon juice - 1 tablespoon

Steps

  1. In a pot, heat coconut oil over medium heat. Add mustard seeds and let them splutter.
  2. Add cumin seeds, asafetida, and turmeric powder, and sauté for 30 seconds.
  3. Add chopped tomatoes and green chilies to the pot, cooking until the tomatoes soften, about 5-7 minutes.
  4. Pour in the water and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
  5. Add salt to taste and stir in the fresh coriander leaves and lemon juice just before serving.
  6. Serve hot, garnished with additional coriander if desired.
