Ingredients

  • Ripe tomatoes - 200 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, chopped
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 5
  • Salt - to taste
  • Coconut oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add chopped onion, garlic, ginger, and green chili to the pan, and sauté until the onion is translucent.
  4. Chop the ripe tomatoes and add them to the pan along with salt and curry leaves.
  5. Cook the mixture for about 10-12 minutes, stirring occasionally, until the tomatoes soften and break down.
  6. Remove from heat and allow to cool slightly.
  7. Blend the mixture until smooth or leave it chunky based on your preference.
  8. Stir in lemon juice and garnish with fresh coriander before serving.
