Ingredients

  • Cauliflower - 400 grams, cut into florets
  • Greek yogurt - 120 grams
  • Tandoori masala - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, cumin powder, coriander powder, and salt. Mix well until a smooth marinade forms.
  3. Add the cauliflower florets to the marinade and toss until all pieces are evenly coated.
  4. Spread the marinated cauliflower on a baking tray lined with parchment paper. Drizzle with olive oil.
  5. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and slightly charred, stirring halfway through.
