- Cauliflower - 400 grams, cut into florets
- Greek yogurt - 120 grams
- Tandoori masala - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, cumin powder, coriander powder, and salt. Mix well until a smooth marinade forms.
- Add the cauliflower florets to the marinade and toss until all pieces are evenly coated.
- Spread the marinated cauliflower on a baking tray lined with parchment paper. Drizzle with olive oil.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and slightly charred, stirring halfway through.
