Ingredients

  • 2 large bell peppers (any color)
  • 200 grams ground chicken or turkey
  • 150 grams cauliflower (riced)
  • 1 tablespoon coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon fresh cilantro, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Add the ground chicken or turkey to the skillet, breaking it apart with a spoon. Cook until browned.
  6. Stir in the riced cauliflower, garam masala, turmeric powder, red chili powder, and salt. Cook for an additional 5-7 minutes until the cauliflower is tender and all the spices are well combined.
  7. Stuff the mixture into the hollowed bell peppers, pressing down gently to pack the filling.
  8. Place the stuffed peppers upright in a baking dish. If there is leftover filling, you can place it around the peppers.
  9. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
  10. Garnish with fresh cilantro before serving.
