- Large button mushrooms - 8 pieces
- Paneer (Indian cottage cheese) - 100 grams, crumbled
- Fresh spinach - 50 grams, chopped
- Ghee (clarified butter) - 1 tablespoon
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Grated Parmesan cheese - 2 tablespoons (optional)
Steps
- Preheat the oven to 180°C (350°F).
- Clean the mushrooms and carefully remove the stems, creating a hollow space for stuffing.
- In a skillet, heat ghee over medium heat. Add minced garlic and green chili, sautéing for about 1 minute until fragrant.
- Add the chopped spinach and cook until wilted, about 2-3 minutes.
- In a mixing bowl, combine the sautéed spinach mixture with crumbled paneer, cumin powder, garam masala, salt, black pepper, and chopped coriander leaves. Mix well.
- Stuff each mushroom cap generously with the paneer mixture.
- Place the stuffed mushrooms on a baking tray lined with parchment paper. If using, sprinkle grated Parmesan cheese on top.
- Bake in the preheated oven for 15-20 minutes or until the mushrooms are tender and the tops are golden brown.
- Remove from the oven and let cool slightly before serving.
