Ingredients

  • Fresh spinach - 200 grams
  • Coconut oil - 1 tablespoon
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit (optional)
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. In a pot, heat coconut oil over medium heat. Add chopped onions and sauté until they become translucent.
  2. Add minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
  3. Add fresh spinach to the pot and cook until wilted, about 3-4 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  5. Stir in the coconut milk and cumin powder, then blend the mixture using an immersion blender until smooth.
  6. Season with salt, black pepper, and lemon juice to taste.
  7. Serve hot, garnished with fresh coriander.
