Ingredients

  • Cauliflower rice - 300 grams
  • Fresh spinach - 150 grams
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Coriander leaves - for garnish

Steps

  1. Heat the coconut oil in a pan over medium heat.
  2. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add the chopped green chili, grated ginger, and minced garlic. Sauté for 1-2 minutes until fragrant.
  4. Incorporate the chopped onion and cook until translucent.
  5. Add the turmeric powder, salt, and black pepper, and mix well.
  6. Stir in the fresh spinach and cook until wilted, about 3-4 minutes.
  7. Add the cauliflower rice and mix thoroughly to combine with the spinach mixture.
  8. Cover the pan and let it cook for 5-7 minutes, stirring occasionally until the cauliflower is tender.
  9. Remove from heat and stir in the lemon juice.
  10. Garnish with fresh coriander leaves and serve hot.
