Ingredients

  • Cauliflower rice - 300 grams
  • Spinach - 100 grams
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 teaspoon
  • Green chili (chopped) - 1 small
  • Onion (finely chopped) - 1 small
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add cumin seeds and mustard seeds, and sauté until they start to splutter.
  3. Stir in grated ginger, minced garlic, and chopped green chili, and cook for about 1 minute until fragrant.
  4. Add finely chopped onion and sauté until it becomes translucent.
  5. Add turmeric powder and garam masala, and stir well to combine the spices.
  6. Incorporate the spinach and cook until wilted, about 2-3 minutes.
  7. Add cauliflower rice and season with salt and black pepper, stirring to combine everything evenly.
  8. Cover the pan and let it cook on low heat for about 10-15 minutes, stirring occasionally until the cauliflower is tender but not mushy.
  9. Remove from heat, garnish with fresh coriander leaves, and serve hot.
