Ingredients

  • Almond flour - 1 cup
  • Fresh spinach - 1 cup, chopped
  • Psyllium husk - 2 tablespoons
  • Water - 1/4 cup
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Ghee or coconut oil - for cooking

Steps

  1. In a bowl, combine almond flour, psyllium husk, cumin powder, turmeric powder, and salt.
  2. Add the chopped spinach to the dry mixture and mix well.
  3. Gradually add water to the mixture, kneading until it forms a smooth dough.
  4. Cover the dough with a damp cloth and let it rest for about 10 minutes.
  5. Divide the dough into 4 equal portions and roll each portion into a ball.
  6. On a parchment paper, flatten each ball into a disc, about 1/4 inch thick.
  7. Heat a skillet over medium heat and add a teaspoon of ghee or coconut oil.
  8. Cook each paratha for 2-3 minutes on each side, until golden brown, adding more ghee as needed.
