- Spinach - 200 grams
- Paneer - 150 grams
- Heavy cream - 100 ml
- Ghee - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash the spinach thoroughly and boil it in water for 2-3 minutes until wilted. Drain and immediately transfer to cold water to retain its green color. Blend the spinach into a smooth puree and set aside.
- Cut the paneer into bite-sized cubes. Heat ghee in a pan over medium heat and add cumin seeds. Once they start to splutter, add minced garlic, grated ginger, and chopped green chili. Sauté for a minute until fragrant.
- Add the paneer cubes to the pan and lightly fry them until they are golden on all sides, then remove and set aside.
- In the same pan, add the spinach puree, turmeric powder, garam masala, salt, and black pepper. Stir well and let it simmer for 5 minutes.
- Reduce the heat and slowly stir in the heavy cream, mixing well to combine all the ingredients. Let it cook for another 3-4 minutes.
- Add the fried paneer back into the spinach mixture, gently folding it in. Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot with a side of keto-friendly bread or on its own.
