Ingredients

  • Spinach - 200 grams
  • Paneer - 150 grams
  • Heavy cream - 100 ml
  • Ghee - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, finely chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the spinach thoroughly and boil it in water for 2-3 minutes until wilted. Drain and immediately transfer to cold water to retain its green color. Blend the spinach into a smooth puree and set aside.
  2. Cut the paneer into bite-sized cubes. Heat ghee in a pan over medium heat and add cumin seeds. Once they start to splutter, add minced garlic, grated ginger, and chopped green chili. Sauté for a minute until fragrant.
  3. Add the paneer cubes to the pan and lightly fry them until they are golden on all sides, then remove and set aside.
  4. In the same pan, add the spinach puree, turmeric powder, garam masala, salt, and black pepper. Stir well and let it simmer for 5 minutes.
  5. Reduce the heat and slowly stir in the heavy cream, mixing well to combine all the ingredients. Let it cook for another 3-4 minutes.
  6. Add the fried paneer back into the spinach mixture, gently folding it in. Cook for an additional 2-3 minutes until everything is heated through.
  7. Serve hot with a side of keto-friendly bread or on its own.
