Ingredients
- Fresh spinach - 200 grams
- Almond flour - 60 grams
- Egg - 1 large
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Coconut oil - 2 tablespoons for frying
Steps
- Wash the spinach thoroughly and chop it finely. Blanch the spinach in boiling water for 2 minutes, then drain and cool in ice water.
- Once cooled, squeeze out excess water from the spinach and place it in a mixing bowl.
- Add the chopped onion, minced garlic, grated ginger, almond flour, egg, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and black pepper to the bowl.
- Mix all the ingredients well until they form a thick batter.
- Heat coconut oil in a non-stick skillet over medium heat.
- Scoop out tablespoon-sized portions of the batter and flatten them slightly to form fritters.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
- Remove them from the skillet and place on paper towels to drain excess oil.
- Serve hot with a side of keto-friendly chutney or yogurt dip.
