Ingredients

  • Fresh spinach - 200 grams
  • Almond flour - 60 grams
  • Egg - 1 large
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Coconut oil - 2 tablespoons for frying

Steps

  1. Wash the spinach thoroughly and chop it finely. Blanch the spinach in boiling water for 2 minutes, then drain and cool in ice water.
  2. Once cooled, squeeze out excess water from the spinach and place it in a mixing bowl.
  3. Add the chopped onion, minced garlic, grated ginger, almond flour, egg, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and black pepper to the bowl.
  4. Mix all the ingredients well until they form a thick batter.
  5. Heat coconut oil in a non-stick skillet over medium heat.
  6. Scoop out tablespoon-sized portions of the batter and flatten them slightly to form fritters.
  7. Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
  8. Remove them from the skillet and place on paper towels to drain excess oil.
  9. Serve hot with a side of keto-friendly chutney or yogurt dip.
