Ingredients

  • Fresh spinach - 200 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml
  • Grated Parmesan cheese - 30 grams
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Blanch the spinach in boiling water for 2 minutes, then drain and cool in ice water. Squeeze out excess water and finely chop the spinach.
  2. In a mixing bowl, combine the chopped spinach, almond flour, and egg. Mix well to form a dough. If the dough is too sticky, add a little more almond flour.
  3. Divide the dough into two parts and roll each part into a thin sheet using a rolling pin. Cut the sheets into fettuccine strips using a knife or a pasta cutter.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream, then add the grated Parmesan cheese, cumin powder, turmeric powder, salt, and black pepper. Stir well and simmer for 5 minutes until the sauce thickens slightly.
  6. Add the cooked fettuccine to the skillet and toss to coat well with the sauce. Cook for an additional 2-3 minutes to heat through.
  7. Serve hot, garnished with fresh coriander.
