Ingredients
- Fresh spinach - 200 grams
- Almond flour - 100 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Heavy cream - 100 ml
- Grated Parmesan cheese - 30 grams
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Blanch the spinach in boiling water for 2 minutes, then drain and cool in ice water. Squeeze out excess water and finely chop the spinach.
- In a mixing bowl, combine the chopped spinach, almond flour, and egg. Mix well to form a dough. If the dough is too sticky, add a little more almond flour.
- Divide the dough into two parts and roll each part into a thin sheet using a rolling pin. Cut the sheets into fettuccine strips using a knife or a pasta cutter.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream, then add the grated Parmesan cheese, cumin powder, turmeric powder, salt, and black pepper. Stir well and simmer for 5 minutes until the sauce thickens slightly.
- Add the cooked fettuccine to the skillet and toss to coat well with the sauce. Cook for an additional 2-3 minutes to heat through.
- Serve hot, garnished with fresh coriander.
