Ingredients

  • Spinach - 200 grams
  • Almond flour - 100 grams
  • Yogurt (unsweetened, full-fat) - 50 grams
  • Baking powder - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Green chili (finely chopped) - 1 small
  • Salt - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Oil (for greasing) - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Water - 50 ml

Steps

  1. Preheat the oven to 180°C (350°F) and grease a baking dish with oil.
  2. Blanch the spinach in boiling water for 2-3 minutes, then drain and blend it into a smooth puree.
  3. In a mixing bowl, combine the spinach puree, almond flour, yogurt, baking powder, ginger paste, green chili, salt, turmeric powder, cumin seeds, lemon juice, and water. Mix well to form a smooth batter.
  4. Pour the batter into the greased baking dish and spread it evenly.
  5. Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow it to cool for a few minutes before cutting into squares and serving.
