Ingredients
- Spinach - 200 grams
- Red lentils (masoor dal) - 50 grams
- Coconut oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit (optional)
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish (optional)
Steps
- Rinse the red lentils under cold water until the water runs clear, then soak them in water for about 15 minutes.
- In a pan, heat the coconut oil over medium heat and add the cumin seeds. Allow them to sizzle for about 30 seconds.
- Add the minced garlic, grated ginger, and slit green chili to the pan. Sauté for 1-2 minutes until fragrant.
- Add the soaked lentils to the pan along with 2 cups of water, turmeric powder, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low and let it simmer for 15-20 minutes or until the lentils are soft and cooked through.
- In the last 5 minutes of cooking, add the chopped spinach to the lentil mixture. Stir well and let it simmer until the spinach is wilted.
- Taste and adjust salt and pepper as needed. Serve hot, garnished with fresh cilantro if desired.
