Ingredients

  • Spinach - 200 grams
  • Red lentils (masoor dal) - 50 grams
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit (optional)
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish (optional)

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then soak them in water for about 15 minutes.
  2. In a pan, heat the coconut oil over medium heat and add the cumin seeds. Allow them to sizzle for about 30 seconds.
  3. Add the minced garlic, grated ginger, and slit green chili to the pan. Sauté for 1-2 minutes until fragrant.
  4. Add the soaked lentils to the pan along with 2 cups of water, turmeric powder, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes or until the lentils are soft and cooked through.
  6. In the last 5 minutes of cooking, add the chopped spinach to the lentil mixture. Stir well and let it simmer until the spinach is wilted.
  7. Taste and adjust salt and pepper as needed. Serve hot, garnished with fresh cilantro if desired.
