- Mustard greens - 200 grams
- Spinach - 100 grams
- Ghee - 2 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chilies - 1, finely chopped
- Onion - 1 small, finely chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Cream - 50 ml
- Water - 500 ml
Steps
- Wash the mustard greens and spinach thoroughly under running water. Chop them coarsely and set aside.
- In a large pot, bring 500 ml of water to a boil. Add the chopped mustard greens and spinach, and cook for 5-7 minutes until wilted.
- Drain the greens and let them cool slightly. Once cooled, blend them into a smooth paste using a blender or food processor. Set aside.
- In a separate pan, heat 2 tablespoons of ghee over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion, green chilies, ginger, and minced garlic. Sauté until the onions become translucent.
- Stir in the turmeric powder, red chili powder, and salt. Cook for another minute to blend the spices.
- Add the blended greens to the pan and mix well. Cook the mixture for about 10 minutes, stirring occasionally.
- Lower the heat and stir in the cream. Cook for an additional 2-3 minutes until well combined and heated through.
- Serve hot, garnished with a drizzle of ghee or a dollop of cream if desired.
