Ingredients

  • Paneer - 200 grams
  • Erythritol or Stevia - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Almonds (finely chopped) - 2 tablespoons
  • Pistachios (finely chopped) - 1 tablespoon
  • Ghee - 1 teaspoon

Steps

  1. Start by crumbling the paneer in a bowl until it is smooth and free of lumps.
  2. In a non-stick pan, melt the ghee over low heat and add the crumbled paneer.
  3. Stir in the erythritol (or stevia) and cardamom powder, mixing well until the sweetener is fully dissolved.
  4. Cook the mixture for about 5-7 minutes, stirring continuously until it thickens and starts to leave the sides of the pan.
  5. Remove the pan from heat and let the mixture cool down slightly.
  6. Once cooled, shape the mixture into small discs or desired shapes using your hands.
  7. Garnish each piece with finely chopped almonds and pistachios.
  8. Allow the Sandesh to set in the refrigerator for at least 15 minutes before serving.
