- Paneer - 200 grams
- Erythritol or Stevia - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Almonds (finely chopped) - 2 tablespoons
- Pistachios (finely chopped) - 1 tablespoon
- Ghee - 1 teaspoon
Steps
- Start by crumbling the paneer in a bowl until it is smooth and free of lumps.
- In a non-stick pan, melt the ghee over low heat and add the crumbled paneer.
- Stir in the erythritol (or stevia) and cardamom powder, mixing well until the sweetener is fully dissolved.
- Cook the mixture for about 5-7 minutes, stirring continuously until it thickens and starts to leave the sides of the pan.
- Remove the pan from heat and let the mixture cool down slightly.
- Once cooled, shape the mixture into small discs or desired shapes using your hands.
- Garnish each piece with finely chopped almonds and pistachios.
- Allow the Sandesh to set in the refrigerator for at least 15 minutes before serving.
