Ingredients

  • Cauliflower Rice - 1 cup
  • Peanuts - 1/4 cup, roasted and crushed
  • Ghee - 2 tablespoons
  • Cumin Seeds - 1 teaspoon
  • Green Chilies - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander Powder - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh Coriander - 2 tablespoons, chopped for garnish
  • Lemon Juice - 1 tablespoon

Steps

  1. Heat ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped green chilies and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Stir in the cauliflower rice, and cook for about 5 minutes until tender.
  4. Add crushed peanuts, coriander powder, turmeric powder, and salt. Mix well and cook for another 3-4 minutes.
  5. Remove from heat, stir in fresh coriander and lemon juice before serving.
