Ingredients

  • Fresh spinach - 300 grams
  • Paneer - 200 grams, cubed
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit (adjust to taste)
  • Heavy cream - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted. Drain and immediately transfer to ice water to stop the cooking process.
  2. Once cooled, blend the spinach into a smooth paste using a little water if necessary. Set aside.
  3. In a pan, heat ghee over medium heat. Add cumin seeds and let them sizzle.
  4. Add grated ginger, minced garlic, and slit green chili. Sauté for 1-2 minutes until fragrant.
  5. Add the spinach puree to the pan and mix well. Cook for 5-7 minutes, stirring occasionally.
  6. Stir in the cubed paneer, heavy cream, garam masala, salt, and black pepper. Cook for another 5 minutes until heated through.
  7. Serve hot, garnished with a drizzle of extra cream if desired.
