- Fresh spinach - 300 grams
- Paneer - 200 grams, cubed
- Ghee - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit (adjust to taste)
- Heavy cream - 2 tablespoons
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes until wilted. Drain and immediately transfer to ice water to stop the cooking process.
- Once cooled, blend the spinach into a smooth paste using a little water if necessary. Set aside.
- In a pan, heat ghee over medium heat. Add cumin seeds and let them sizzle.
- Add grated ginger, minced garlic, and slit green chili. Sauté for 1-2 minutes until fragrant.
- Add the spinach puree to the pan and mix well. Cook for 5-7 minutes, stirring occasionally.
- Stir in the cubed paneer, heavy cream, garam masala, salt, and black pepper. Cook for another 5 minutes until heated through.
- Serve hot, garnished with a drizzle of extra cream if desired.
