Ingredients

  • Lamb or goat meat - 400 grams, cubed
  • Spinach - 200 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Ginger - 1 inch, grated
  • Garlic - 4 cloves, minced
  • Green chili - 1, slit
  • Ghee or coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Heavy cream - 60 ml
  • Water - 200 ml

Steps

  1. Heat ghee or coconut oil in a large pan over medium heat.
  2. Add cumin seeds and let them sizzle for about 30 seconds.
  3. Add the chopped onions and sauté until golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 2 minutes.
  5. Add the cubed meat and cook until browned on all sides.
  6. Mix in turmeric, coriander powder, and salt, cooking for 2 minutes to release the spices' aromas.
  7. Pour in the water, cover, and let it simmer for 20 minutes until the meat is tender.
  8. Add the chopped spinach and mix well, cooking for another 5 minutes until the spinach has wilted.
  9. Stir in the heavy cream and garam masala, simmering for an additional 5 minutes.
  10. Serve hot, garnished with a drizzle of cream or a sprinkle of garam masala.
