- Lamb or goat meat - 400 grams, cubed
- Spinach - 200 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Garlic - 4 cloves, minced
- Green chili - 1, slit
- Ghee or coconut oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Heavy cream - 60 ml
- Water - 200 ml
Steps
- Heat ghee or coconut oil in a large pan over medium heat.
- Add cumin seeds and let them sizzle for about 30 seconds.
- Add the chopped onions and sauté until golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 2 minutes.
- Add the cubed meat and cook until browned on all sides.
- Mix in turmeric, coriander powder, and salt, cooking for 2 minutes to release the spices' aromas.
- Pour in the water, cover, and let it simmer for 20 minutes until the meat is tender.
- Add the chopped spinach and mix well, cooking for another 5 minutes until the spinach has wilted.
- Stir in the heavy cream and garam masala, simmering for an additional 5 minutes.
- Serve hot, garnished with a drizzle of cream or a sprinkle of garam masala.
