- Chicken breasts - 300 grams
- Spinach - 200 grams (fresh or frozen)
- Ghee or coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit (optional)
- Cumin seeds - 1 teaspoon
- Ground coriander - 1 teaspoon
- Garam masala - 1 teaspoon
- Heavy cream - 100 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Heat ghee or coconut oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onions and sauté until they are golden brown.
- Stir in minced garlic, grated ginger, and slit green chili. Sauté for an additional 2 minutes until fragrant.
- Add the chicken breasts to the pan, season with salt and black pepper, and cook until browned on all sides (about 5-7 minutes).
- If using fresh spinach, blanch it in boiling water for 2 minutes, then cool and chop. If using frozen spinach, thaw and drain any excess water.
- Add the spinach to the pan, along with ground coriander and garam masala. Mix well and cook for 5 minutes.
- Pour in the heavy cream, stir to combine, and simmer for another 5 minutes until the chicken is cooked through and the flavors meld together.
- Adjust seasoning with more salt and pepper if needed. Serve hot.
