Ingredients

  • Chicken breasts - 300 grams
  • Spinach - 200 grams (fresh or frozen)
  • Ghee or coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Heavy cream - 100 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat ghee or coconut oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until they are golden brown.
  3. Stir in minced garlic, grated ginger, and slit green chili. Sauté for an additional 2 minutes until fragrant.
  4. Add the chicken breasts to the pan, season with salt and black pepper, and cook until browned on all sides (about 5-7 minutes).
  5. If using fresh spinach, blanch it in boiling water for 2 minutes, then cool and chop. If using frozen spinach, thaw and drain any excess water.
  6. Add the spinach to the pan, along with ground coriander and garam masala. Mix well and cook for 5 minutes.
  7. Pour in the heavy cream, stir to combine, and simmer for another 5 minutes until the chicken is cooked through and the flavors meld together.
  8. Adjust seasoning with more salt and pepper if needed. Serve hot.
