  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Green Chili - 1 (finely chopped, adjust to taste)
  • Cumin Seeds - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon
  • Garam Masala - 1 teaspoon
  • Salt - to taste
  • Black Pepper - to taste
  • Boiled Potato - 1 small (optional, for a little more texture)

Steps

  1. Spiralize the zucchini using a spiralizer to create noodles, set aside.
  2. In a pan, heat ghee or coconut oil over medium heat, add cumin seeds, and let them sizzle.
  3. Add minced garlic, grated ginger, and chopped green chili to the pan. Sauté until fragrant, about 1-2 minutes.
  4. Add the spinach to the pan and cook until wilted (if fresh) or heated through (if frozen).
  5. Stir in the mashed cauliflower, turmeric, garam masala, salt, and black pepper. Mix well and cook for another 2-3 minutes.
  6. If using, cube the boiled potato and add it to the spinach mixture, stirring to combine.
  7. In a separate pot, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  8. Combine the zucchini noodles with the saag mixture in the pan, tossing to coat well.
  9. Serve hot, garnished with a drizzle of ghee or a sprinkle of garam masala if desired.
