Steps
- Spiralize the zucchini using a spiralizer to create noodles, set aside.
- In a pan, heat ghee or coconut oil over medium heat, add cumin seeds, and let them sizzle.
- Add minced garlic, grated ginger, and chopped green chili to the pan. Sauté until fragrant, about 1-2 minutes.
- Add the spinach to the pan and cook until wilted (if fresh) or heated through (if frozen).
- Stir in the mashed cauliflower, turmeric, garam masala, salt, and black pepper. Mix well and cook for another 2-3 minutes.
- If using, cube the boiled potato and add it to the spinach mixture, stirring to combine.
- In a separate pot, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
- Combine the zucchini noodles with the saag mixture in the pan, tossing to coat well.
- Serve hot, garnished with a drizzle of ghee or a sprinkle of garam masala if desired.
