Ingredients
- Fresh spinach - 200 grams
- Cauliflower - 200 grams, chopped into small florets
- Ghee (or coconut oil) - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit (optional)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Water - as needed
- Heavy cream - 2 tablespoons (optional)
- Lemon juice - 1 tablespoon
Steps
- In a large pot, bring water to a boil and add chopped cauliflower florets. Cook for about 5-7 minutes until tender, then drain and set aside.
- In the same pot, add ghee (or coconut oil) and heat over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until golden brown, about 5 minutes.
- Stir in the minced garlic, grated ginger, and slit green chili. Sauté for an additional 1-2 minutes until fragrant.
- Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
- Add the fresh spinach to the pot and cook until wilted, about 3-4 minutes. Stir occasionally.
- Once the spinach is wilted, add the cooked cauliflower florets and mix everything together.
- Pour in a little water if the mixture is too thick, then cook for an additional 5 minutes to combine the flavors.
- Remove from heat and stir in the heavy cream (if using) and lemon juice for added creaminess and tang.
- Serve hot, garnished with a sprinkle of garam masala and enjoy your Keto Saag Aloo!
