Ingredients

  • Fresh spinach - 200 grams
  • Cauliflower - 200 grams, chopped into small florets
  • Ghee (or coconut oil) - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Water - as needed
  • Heavy cream - 2 tablespoons (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, bring water to a boil and add chopped cauliflower florets. Cook for about 5-7 minutes until tender, then drain and set aside.
  2. In the same pot, add ghee (or coconut oil) and heat over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the finely chopped onion and sauté until golden brown, about 5 minutes.
  4. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for an additional 1-2 minutes until fragrant.
  5. Add turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
  6. Add the fresh spinach to the pot and cook until wilted, about 3-4 minutes. Stir occasionally.
  7. Once the spinach is wilted, add the cooked cauliflower florets and mix everything together.
  8. Pour in a little water if the mixture is too thick, then cook for an additional 5 minutes to combine the flavors.
  9. Remove from heat and stir in the heavy cream (if using) and lemon juice for added creaminess and tang.
  10. Serve hot, garnished with a sprinkle of garam masala and enjoy your Keto Saag Aloo!
