Ingredients

  • Turmeric powder - 1/4 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, finely chopped
  • Bell pepper - 1/4 cup, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons for cooking

Steps

  1. In a mixing bowl, combine almond flour, chia seeds, baking powder, salt, turmeric, and cumin powder.
  2. Gradually add water to the dry ingredients, stirring until a smooth batter forms.
  3. Fold in the chopped onion, tomato, bell pepper, and cilantro into the batter.
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  5. Pour half of the batter onto the skillet, spreading it into a thick pancake shape.
  6. Cook for 4-5 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes.
  7. Repeat with the remaining batter, using the remaining olive oil.
  8. Serve hot with a side of keto-friendly chutney or yogurt.
