Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Green chilies - 2, finely chopped
  • Ginger - 1 teaspoon, grated
  • Onion - 1 medium, finely chopped
  • Bell pepper - 1/2 medium, finely chopped
  • Carrot - 1 small, finely chopped
  • Peas - 50 grams, fresh or frozen
  • Curry leaves - 8-10 leaves
  • Salt - to taste
  • Water - 300 ml
  • Coriander leaves - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add mustard seeds and cumin seeds, and let them splutter.
  3. Add the chopped green chilies, grated ginger, and onions. Sauté until the onions are translucent.
  4. Add the bell pepper, carrot, peas, and curry leaves. Sauté for about 5-7 minutes or until the vegetables are tender.
  5. Stir in the almond flour and salt, mixing well with the vegetables.
  6. Gradually add water while stirring continuously to avoid lumps.
  7. Keep stirring until the mixture thickens and becomes cohesive, about 5-10 minutes.
  8. Remove from heat and let it sit for a couple of minutes.
  9. Garnish with chopped coriander leaves and serve hot.
