- Almond flour - 100 grams
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Green chilies - 2, finely chopped
- Ginger - 1 teaspoon, grated
- Onion - 1 medium, finely chopped
- Bell pepper - 1/2 medium, finely chopped
- Carrot - 1 small, finely chopped
- Peas - 50 grams, fresh or frozen
- Curry leaves - 8-10 leaves
- Salt - to taste
- Water - 300 ml
- Coriander leaves - for garnish
Steps
- Heat coconut oil in a pan over medium heat.
- Add mustard seeds and cumin seeds, and let them splutter.
- Add the chopped green chilies, grated ginger, and onions. Sauté until the onions are translucent.
- Add the bell pepper, carrot, peas, and curry leaves. Sauté for about 5-7 minutes or until the vegetables are tender.
- Stir in the almond flour and salt, mixing well with the vegetables.
- Gradually add water while stirring continuously to avoid lumps.
- Keep stirring until the mixture thickens and becomes cohesive, about 5-10 minutes.
- Remove from heat and let it sit for a couple of minutes.
- Garnish with chopped coriander leaves and serve hot.
