- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Greek yogurt - 1/2 cup
- Baking powder - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Water - 1/4 cup
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves, chopped
- Ginger - 1 tablespoon, grated
- Green chili - 1, finely chopped
- Coconut oil - 1 tablespoon (for greasing)
Steps
- In a mixing bowl, combine almond flour, coconut flour, baking powder, turmeric powder, and salt.
- In another bowl, mix Greek yogurt and water to create a smooth batter.
- Gradually combine the dry ingredients with the wet mixture until a thick batter forms.
- Add chopped green chili, grated ginger, mustard seeds, and curry leaves into the batter, mixing well.
- Grease idli molds with coconut oil and pour the batter into each mold, filling them about 3/4 full.
- Prepare a steamer with water and bring it to a boil. Place the idli molds in the steamer.
- Cover and steam for about 15-20 minutes until the idlis are set and a toothpick inserted comes out clean.
- Remove from the steamer, let cool slightly, and carefully take the idlis out of the molds.
