Ingredients

  • Tomato - 200 grams, chopped
  • Water - 500 ml
  • Coconut oil - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Green chili - 1, slit (optional)

Steps

  1. In a pot, heat the coconut oil over medium heat. Add mustard seeds and cumin seeds, and allow them to splutter.
  2. Add the grated ginger, minced garlic, and slit green chili to the pot. Sauté for about 1 minute until fragrant.
  3. Stir in the chopped tomatoes and cook until they soften, about 5-7 minutes.
  4. Add turmeric powder, black pepper, and salt to the pot. Mix well and cook for another 2 minutes.
  5. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10-15 minutes.
  6. Remove from heat and add fresh coriander leaves and lemon juice. Mix well.
  7. Serve hot, garnished with additional coriander leaves if desired.
