Ingredients
- Tomato - 200 grams, chopped
- Water - 500 ml
- Coconut oil - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Green chili - 1, slit (optional)
Steps
- In a pot, heat the coconut oil over medium heat. Add mustard seeds and cumin seeds, and allow them to splutter.
- Add the grated ginger, minced garlic, and slit green chili to the pot. Sauté for about 1 minute until fragrant.
- Stir in the chopped tomatoes and cook until they soften, about 5-7 minutes.
- Add turmeric powder, black pepper, and salt to the pot. Mix well and cook for another 2 minutes.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10-15 minutes.
- Remove from heat and add fresh coriander leaves and lemon juice. Mix well.
- Serve hot, garnished with additional coriander leaves if desired.
