- Kidney beans (cooked) - 200 grams
- Almond flour - 50 grams
- Coconut flour - 20 grams
- Onion (finely chopped) - 1 small
- Ginger (grated) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Green chili (finely chopped) - 1 small
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large
- Coconut oil (for frying) - 2 tablespoons
- Lettuce leaves (for wrapping) - 4 large leaves
- Tomato slices - 4 slices
- Cucumber slices - 4 slices
- Avocado (sliced) - 1/2 medium
Steps
- In a mixing bowl, mash the cooked kidney beans until almost smooth, leaving some chunks for texture.
- Add almond flour, coconut flour, chopped onion, ginger, garlic, green chili, cumin powder, coriander powder, garam masala, salt, black pepper, and the egg to the mashed beans. Mix well to combine into a dough-like consistency.
- Divide the mixture into 4 equal portions and shape each portion into a burger patty.
- Heat coconut oil in a frying pan over medium heat. Once hot, add the burger patties to the pan and cook for about 4-5 minutes on each side or until golden brown and cooked through.
- Once cooked, remove the patties from the pan and let them rest for a minute.
- To assemble, take a lettuce leaf, place a burger patty in the center, and top with tomato slices, cucumber slices, and avocado.
- Wrap the lettuce around the filling and serve immediately.
