- Canned kidney beans - 200 grams, drained and rinsed
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit (optional)
- Tomato puree - 150 grams
- Coconut cream - 100 ml
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
- Add minced garlic, grated ginger, and slit green chili. Sauté for another 2-3 minutes until fragrant.
- Stir in the tomato puree and cook for about 5 minutes until the oil separates from the mixture.
- Add cumin powder, coriander powder, turmeric powder, and salt. Mix well and cook for another 2 minutes.
- Add the drained kidney beans and stir to coat them in the spice mixture.
- Pour in the coconut cream and stir well. Let it simmer for 10 minutes to allow the flavors to blend.
- Finish with garam masala and mix well. Cook for an additional 2 minutes.
- Garnish with fresh cilantro before serving.
