Ingredients

  • Canned kidney beans - 200 grams, drained and rinsed
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit (optional)
  • Tomato puree - 150 grams
  • Coconut cream - 100 ml
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add minced garlic, grated ginger, and slit green chili. Sauté for another 2-3 minutes until fragrant.
  3. Stir in the tomato puree and cook for about 5 minutes until the oil separates from the mixture.
  4. Add cumin powder, coriander powder, turmeric powder, and salt. Mix well and cook for another 2 minutes.
  5. Add the drained kidney beans and stir to coat them in the spice mixture.
  6. Pour in the coconut cream and stir well. Let it simmer for 10 minutes to allow the flavors to blend.
  7. Finish with garam masala and mix well. Cook for an additional 2 minutes.
  8. Garnish with fresh cilantro before serving.
