Ingredients

  • Lamb shoulder - 400 grams, cut into chunks
  • Ghee (clarified butter) - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Dried red chilies - 4-5, soaked in warm water
  • Coriander powder - 2 teaspoons
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Water - 1 cup
  • Fresh coriander leaves - for garnish

Steps

  1. In a blender, grind the soaked dried red chilies into a smooth paste with a little water and set aside.
  2. Heat ghee in a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until golden brown.
  3. Add minced garlic and grated ginger to the pan and sauté for another minute until fragrant.
  4. Stir in the lamb chunks and cook until they are browned on all sides.
  5. Add the chili paste, coriander powder, cumin powder, turmeric powder, and salt. Mix well and cook for about 5 minutes, allowing the spices to coat the meat.
  6. Pour in 1 cup of water, bring it to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes, or until the lamb is tender.
  7. Once done, sprinkle garam masala on top and mix well.
  8. Garnish with fresh coriander leaves before serving.
  9. Serve hot with a side of keto-friendly cauliflower rice or a salad.
