- Lamb shoulder - 400 grams, cut into chunks
- Ghee (clarified butter) - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Dried red chilies - 4-5, soaked in warm water
- Coriander powder - 2 teaspoons
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Water - 1 cup
- Fresh coriander leaves - for garnish
Steps
- In a blender, grind the soaked dried red chilies into a smooth paste with a little water and set aside.
- Heat ghee in a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until golden brown.
- Add minced garlic and grated ginger to the pan and sauté for another minute until fragrant.
- Stir in the lamb chunks and cook until they are browned on all sides.
- Add the chili paste, coriander powder, cumin powder, turmeric powder, and salt. Mix well and cook for about 5 minutes, allowing the spices to coat the meat.
- Pour in 1 cup of water, bring it to a boil, then reduce the heat to low. Cover and simmer for 40-45 minutes, or until the lamb is tender.
- Once done, sprinkle garam masala on top and mix well.
- Garnish with fresh coriander leaves before serving.
- Serve hot with a side of keto-friendly cauliflower rice or a salad.
