Ingredients

  • Ragi flour - 60 grams
  • Coconut milk - 200 ml
  • Water - 200 ml
  • Coconut oil - 1 tablespoon
  • Chia seeds - 1 tablespoon
  • Stevia or Erythritol - to taste
  • Salt - a pinch
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds or walnuts) - 2 tablespoons

Steps

  1. In a saucepan, mix the ragi flour with water to make a smooth paste, ensuring there are no lumps.
  2. Add the coconut milk and a pinch of salt to the ragi mixture, stirring well.
  3. Heat the mixture over medium heat, continuously stirring until it thickens, about 5-7 minutes.
  4. Once thickened, lower the heat and add in the chia seeds, sweetener, and cardamom powder, mixing well.
  5. Remove from heat and stir in the coconut oil until fully incorporated.
  6. Serve hot, topped with chopped nuts for added crunch and nutrition.
