Ingredients

  • Almond milk - 400 ml
  • Heavy cream - 100 ml
  • Erythritol (or preferred sweetener) - 3 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Saffron strands - 1/4 teaspoon
  • Chopped nuts (almonds and pistachios) - 2 tablespoons
  • Rose water - 1 teaspoon (optional)

Steps

  1. In a saucepan, combine the almond milk and heavy cream, and bring it to a simmer over medium heat.
  2. Stir in the erythritol, cardamom powder, and saffron strands, and continue to simmer, stirring occasionally for about 20 minutes until the mixture thickens slightly.
  3. Remove from heat and let it cool for a few minutes. If desired, add rose water for extra aroma.
  4. Divide the rabri into serving bowls and garnish with chopped nuts.
  5. Chill in the refrigerator for at least 30 minutes before serving for a refreshing dessert.
