Ingredients
- Almond flour - 1 cup
- Psyllium husk - 2 tablespoons
- Water - 1/4 cup
- Salt - a pinch
- Cooked split yellow moong dal - 1/2 cup
- Sweetener (erythritol or stevia) - 3 tablespoons
- Cardamom powder - 1/2 teaspoon
- Ghee or coconut oil - for cooking
Steps
- In a mixing bowl, combine almond flour, psyllium husk, water, and a pinch of salt to form a dough. Knead until smooth and let it rest for 15 minutes.
- In another bowl, mash the cooked moong dal and mix in the sweetener and cardamom powder until well combined.
- Divide the dough into 4 equal portions and roll each portion into a small ball.
- Flatten each ball into a disc, place a tablespoon of the dal mixture in the center, and fold the edges over to seal, forming a stuffed ball.
- Gently roll the stuffed ball into a flat circle, being careful not to let the filling spill out.
- Heat a skillet over medium heat and add a little ghee or coconut oil.
- Cook the rolled Puran Poli for 2-3 minutes on each side until golden brown and slightly crispy.
- Serve warm with a drizzle of ghee on top.
