Ingredients

  • Almond flour - 1 cup
  • Psyllium husk - 2 tablespoons
  • Water - 1/4 cup
  • Salt - a pinch
  • Cooked split yellow moong dal - 1/2 cup
  • Sweetener (erythritol or stevia) - 3 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Ghee or coconut oil - for cooking

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, water, and a pinch of salt to form a dough. Knead until smooth and let it rest for 15 minutes.
  2. In another bowl, mash the cooked moong dal and mix in the sweetener and cardamom powder until well combined.
  3. Divide the dough into 4 equal portions and roll each portion into a small ball.
  4. Flatten each ball into a disc, place a tablespoon of the dal mixture in the center, and fold the edges over to seal, forming a stuffed ball.
  5. Gently roll the stuffed ball into a flat circle, being careful not to let the filling spill out.
  6. Heat a skillet over medium heat and add a little ghee or coconut oil.
  7. Cook the rolled Puran Poli for 2-3 minutes on each side until golden brown and slightly crispy.
  8. Serve warm with a drizzle of ghee on top.
