Ingredients

  • Prawns - 250 grams, peeled and deveined
  • Cauliflower - 300 grams, grated (to make cauliflower rice)
  • Coconut oil - 2 tablespoons
  • Ginger-garlic paste - 1 tablespoon
  • Onion - 1 medium, thinly sliced
  • Green chili - 1, slit
  • Tomato - 1 medium, chopped
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add the sliced onions and sauté until they are translucent.
  3. Stir in the ginger-garlic paste and green chili, cooking for another 1-2 minutes until fragrant.
  4. Add the chopped tomato, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Cook until the tomatoes soften.
  5. Add the prawns to the skillet and cook for 3-4 minutes, or until they turn pink and opaque.
  6. Stir in the grated cauliflower (cauliflower rice) and mix well with the prawn mixture.
  7. Cover and cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  8. Sprinkle garam masala over the dish, mix well, and cook for an additional minute.
  9. Garnish with fresh coriander leaves before serving.
