- Zucchini - 2 medium, spiralized
- Prawns - 250 grams, peeled and deveined
- Coconut oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Tomato puree - 100 grams
- Coconut cream - 100 ml
- Curry powder - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat coconut oil in a large pan over medium heat.
- Add the chopped onion, and sauté until translucent, about 3 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
- Add the prawns to the pan and cook until they turn pink, about 3-4 minutes.
- Stir in the tomato puree, coconut cream, curry powder, turmeric, cumin, salt, and black pepper. Simmer for 5-7 minutes, allowing the sauce to thicken.
- In a separate pan, lightly sauté the spiralized zucchini in a little coconut oil for about 2-3 minutes, just until tender.
- Serve the prawn masala over the zucchini pasta, garnished with fresh cilantro.
