Ingredients

  • Zucchini - 2 medium, spiralized
  • Prawns - 250 grams, peeled and deveined
  • Coconut oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Tomato puree - 100 grams
  • Coconut cream - 100 ml
  • Curry powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add the chopped onion, and sauté until translucent, about 3 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
  4. Add the prawns to the pan and cook until they turn pink, about 3-4 minutes.
  5. Stir in the tomato puree, coconut cream, curry powder, turmeric, cumin, salt, and black pepper. Simmer for 5-7 minutes, allowing the sauce to thicken.
  6. In a separate pan, lightly sauté the spiralized zucchini in a little coconut oil for about 2-3 minutes, just until tender.
  7. Serve the prawn masala over the zucchini pasta, garnished with fresh cilantro.
