  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1-inch piece, grated
  • Green chili - 1, slit lengthwise
  • Tomato - 1 medium, chopped
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add cumin seeds and let them splutter, then add sliced onions and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and green chili; cook for 2 minutes until fragrant.
  4. Add chopped tomatoes and cook until soft, about 3-4 minutes.
  5. Stir in biryani masala, turmeric powder, and coriander powder; cook for another minute.
  6. Add the prawns to the pan, season with salt, and cook until they turn pink, about 3-4 minutes.
  7. Mix in the cauliflower rice and garam masala, ensuring everything is combined well.
  8. Cover the pan and cook on low heat for 5-7 minutes until the cauliflower is tender.
  9. Remove from heat, stir in fresh cilantro, mint leaves, and lemon juice.
  10. Serve hot, garnished with additional herbs if desired.
